    Cranberry Poached Pears -- e-w

    Plan ahead…needs to chill 2 to 24 hours.
    Serves: 6

    2-1/2 c. low-calorie cranberry juice
    3 small pears, halved lengthwise, peeled and cored
    6-in. stick cinnamon broken
    1/4 tsp. black pepper
    1/2 c. fresh cranberries
    1 tsp. vanilla
    1 6-oz. carton plain low-fat yogurt
    2 tsp. honey
    1/2 tsp. vanilla

    In a medium saucepan, bring cranberry juice just to boiling. Add pears, cinnamon and pepper; reduce heat. Cover and simmer for 10 minutes. Remove from heat. Stir in cranberries and 1 tsp vanilla. Transfer to an airtight container Cover and chill 2 to 24 hours. Meanwhile in a small bowl combine remaining 3 ingredients. Cover and chill until needed.

    To serve: Divide cranberry mixture and pears among 6 dessert goblets. Top with yogurt mixture.

    One serving equals: 103 calories…1 gm fat (0 saturated)…2 gm cholesterol…36 mg sodium…24 gm carbohydrate…3 gm fiber…2 gm protein ++++ Exchanges: 1-1/2 fruit ++++ WWP: 2
