Merry Christmas Rice
Serves: 6
2 c. water, ‘divided’
1-1/3 c. sugar, ‘divided’
2 c. (1/2 lb.) fresh or frozen cranberries
1-1/3 c. uncooked instant rice
1/4 tsp. cinnamon
1 apple, peeled and sliced
In a saucepan combine 1/2 c. water and 1 c. sugar. Bring to a boil. Add cranberries; return to a boil. Reduce heat; simmer for 10 minutes or until most of the cranberries pop; stirring occasionally. Add rice and remaining water, remaining sugar and cinnamon. Bring to a boil. Reduce heat. Cover and simmer for 10 minutes. Remove from heat and stir in apple. Cover and let stand for 10 minutes,
