    Nut, Cheese, & tomato Salad - 12 -- e-w
    Plan ahead…dressing needs to chill for at least 1 hour.
    Serves: 12

    1/4 c. olive oil
    3 T. champagne vinegar – or – white wine vinegar
    1 shallot, finely chopped
    1 T. snipped fresh chives
    1-1/2 tsp. lemon juice
    1/8 tsp. salt
    1.8 tsp. pepper

    12 c. fresh baby spinach
    2 tomatoes, cut into wedges
    3/4 c. crumbled goat cheese – or – feta – or – blue cheese
    Optional: 1/2 c. hazelnuts (filberts) toasted and chopped

    For Dressing: In a screw top jar, combine the first 7 ingredients. Cover and shake well. Cover and chill for at least 1 hour

    On serving platter arrange spinach, tomatoes, goat cheese and if desired, hazelnuts. Shake dressing: drizzle over salad.

    One serving w/o optional item equals: 72 calories…6 gm fat (2 gm saturated)…3 mg cholesterol…75 mg sodium…2 gm carbohydrate…1 gm fiber…2 gm protein +++Exc. 1 vegetable…1 fat +++WWP:2
