Polish Apple Pancakes
Serves: 8
1 c. flour
1 T. sugar
1/2 tsp. salt
1 egg
1 c, skim milk
1 T. vegetable oil
5 medium cooking apples, peeled and thinly sliced
Optional: Confectioners’ sugar
In a bowl, combine the first 3 ingredients. In another bowl lightly beat egg; add milk and oil. Add to dry ingredients and stir until smooth. Fold in apples.
Heat griddle coated with non-stick cooking spray; pour batter by 1/2-cupfuls onto hot griddle and spread to for a 5-in. circle. Turn when bubbles begin to form on top. Cook until the second side id golden brown and apples are tender. Dust with confectioners’ sugar if desired.
