Savory Pea Pods and Apples -- e-w
Serves: 10
3 slices turkey bacon, cut crosswise into thin strips
2 tsp. oil
3 tart red cooking apples (such as Jonathon), cut into 1/2 in. wedges
2 medium leeks, chopped
4 c. fresh pea pods, trimmed
1/8 tsp. salt
1/8 tsp. pepper
In a 12-in. skillet, cook turkey bacon in hot oil over medium heat for 2-3 minutes or just until crisp, stirring occasionally.
Add apple and leek. Cook and stir for 3 to 4 minutes or just until apple is tender. Stir in pea pods, salt and pepper. Cover and cook for 2 to 3 minutes or until pea pods are crisp-tender.
