Stuffed Turkey Tenderloins -- e-w

Plan ahead…needs to chill for from 4 to 24 hours.
Serves: 4
2 10-12-oz. turkey breast tenderloins
2 c. chopped fresh spinach leaves
3/4 c. crumbled semi-soft goat cheese (chevre) – or – feta cheese (3-oz.)
1/4 tsp. pepper
2 tsp. olive oil
1 tsp. paprika
1/2 tsp. salt
1/8 tsp. cayenne pepper
Make a pocket in each turkey tenderloin by cutting lengthwise from one side almost to, but not through the opposite side, set aside
For stuffing: In a medium bowl, combine spinach, cheese and pepper. Spoon stuffing into pockets. To hold in stuffing, tie 100%-cotton string around turkey.
In a small bowl combine oil, paprika, salt and cayenne pepper, brush over turkey. Wrap each tenderloin in plastic wrap; chill for 4 to 24 hours.
Preheat oven to 375º Unwrap turkey and place in a shallow baking pan. Bake about 40 minutes or until no longer pink (170º0. Remove and discard strings. Slice turkey crosswise.
