Papa’s Pecan Tassies --e-w
Serves 10
1 purchased refrigerated unbaked folded 9-inch pie crust
1/2 c. Splenda Granular
2 T. cornstarch
Egg substitute equivalent to 1 egg
3/4 c. water
1 T. vanilla
1/2 c. chopped pecans
Preheat oven to 350º. Unfold pie crust. Using a 2-1/2-in. biscuit cutter, cut into 12 circles. Press dough scrape together and cut out 8 more for a total of 20 circles. Pat pastry circles into miniature muffin (or tassie) cups. Press to form tarts.
In a medium saucepan, combine the next 4 ingredients. Cook over medium heat until mixture thickens and starts to boil, stirring constantly. Remove from heat. Stir in vanilla and pecans.
Evenly spoon about 1 T. mixture into each tart. Bake for 16-20 minutes. Place muffin pans on a wire rack to cool for 10 minutes. Remove tassies from pans and continue cooling on wire rack.
One serving (2 tassies) equals: 155 calories…10 gm fat (3 gm saturated)…2 gm protein…14 gm carbohydrate…trace fiber…25 mg cholesterol…88 mg sodium. +++EXC 1 starch…2 fat +++WWP:4
