    Adapted from RD Cooking Smart for a Healthy Heart
    Roast Beef Hash -- w
    Serves: 4

    1 lb. small red-skinned potatoes, cut into 1/4-in. dice
    2 carrots, quartered lengthwise and thinly sliced
    1 T. + 2 tsp. olive oil
    1 medium onion, finely chopped
    2 cloves garlic, minced
    1-1/4 c. frozen corn
    1/4 c. salt
    1/4 c. pepper
    6 oz. cooked roast beef, cut into 1/3-in. dice

    Cook potatoes in medium saucepan of boiling water until almost tender, about 6 minutes. Add carrots and cook minutes longer. Drain

    Spray a large nonstick skillet with cooking spray. Add 1 T. olive oil and heat over medium-low heat. Add onion and garlic to skillet and cook, stirring frequently, until onion is golden brown, about 7 minutes.

    Increase heat to medium-high. Add remaining 2 tsp. oil. Add potatoes and carrots, corn, salt and pepper and cook, stirring occasionally, until mixture starts to form a crust, about 10 minutes.

    Stir in beef and press down on mixture to help form crust. Cook until crusty on the bottom, about 5 minutes.

    One serving equals: 288 calories…9.5 gm fat (2 gm saturated)…33 mg cholesterol…288 mg sodium…36 gm carbohydrate…5 gm fiber…16 gm protein +++WWP:6
