Cake Topped Blueberry Dessert
Serves: 9
3 c. fresh – or – frozen blueberries
1/2 c. packed brown sugar
1 T. stick margarine
3 T. shortening
1/2 c. sugar
1 egg
1 tsp. grated orange peel
1-1/4 c. flour
1-1/2 tsp. baking powder
1/8 tsp. salt
1/3 c. orange juice
In a saucepan, combine the first 3 ingredients; cook for 5 minutes or until saucy. Pour into an 8-in. square baking dish coated with nonstick cooking spray.
In a mixing bowl, cream shortening and sugar. Beat in egg and orange peel. Combine the next 3 ingredients; add to the creamed mixture alternately with orange juice; beating just until combined.
Drop batter by spoonfuls over blueberry mixture. Bake at 350º for 30-35 minutes or until a wooden toothpick inserted near the center comes out clean. Serve warm.
