Chocolate Macadamia Nut Soufflés -- w

Serves: 6
1/2 c. 1% milk
1/2 c. water
1/2 c. powdered sugar
1/2 c. cocoa
2 T. flour
4 oz. semisweet chocolate, chopped
2 egg whites at room temperature
1 pinch cream of tartar
4 T. granulated sugar
1 tsp. vanilla
1 egg yolk
6 T. chopped macadamia nuts, ‘divided’
Powdered sugar for dusting
Preheat oven to 350º. Position the rack on the lower third of the oven. Spray 4 soufflé cups with nonstick cooking spray and set aside.
In a medium saucepan, combine the milk and water and sift in the powdered sugar, cocoa and flour. Stir in chocolate. Cook on low heat for 4 to 5 minutes, whisking constantly, until mixture thickens. Remove from heat and pour into a large bowl to cool.
In a small bowl, beat the egg whites and cream of tartar until soft peaks form. Gradually add the sugar and beat until stiff.
To the cooled chocolate mixture stir in the vanilla, egg yolk and 4 T. chopped nuts. Fold in the whipped egg whites. Divide the mixture among the 4 souffle cups. Sprinkle with remaining chopped nuts.
Bake on a baking sheet for 15 to 20 minutes, until soufflés have puffed above the rims. Insert a toothpick in the center. If there are moist crumbs, the soufflés are properly cooked. Dust with powdered sugar.
