Lime Frozen Yogurt -- w
Plan ahead…needs to freeze for 2-4 hours before serving.
Serves: 6
4 c. fat-free plain yogurt
1-1/2 c. sugar
2/3 c. lime juice
2 T. grated lime peel
1/8 tsp. salt
1 large fresh pineapple, peeled, cored and cut into 3/4-inch wedges.
Optional: Fresh mint
In a bowl, combine the first 5 ingredients; stir until sugar is dissolved. Freeze in an ice cream freezer according to manufacturer’s instructions. Allow to ripen in the ice cream freezer or firm up in your refrigerator’s freezer for 2-4 hours before serving.
Coat grill rack with nonstick cooking spray before starting the grill. Grill pineapple, uncovered, over medium heat for 2 minutes. Turn and grill 1-2 minutes longer or until heated through. Serve with lime frozen yogurt. Garnish with mint, if desired.
