    Chocolate Éclair Graham Dessert – for 2 - w

    Chocolate Éclair Graham Dessert – for 2 -- w
    Plan ahead…needs to refrigerate overnight.
    Serves: 4

    9 graham cracker squares
    1/2 c. cold 2% milk
    1/3 c. instant vanilla pudding mix *(Lower calories and carbs by using ‘sugar-free’ instant pudding)
    1/2 c. whipped topping

    Topping:
    1/2 square (1/2-oz.) semisweet chocolate
    1-1/2 tsp butter – or – stick margarine
    2-1/4 tsp. 2% milk
    1-1/2 tsp. light corn syrup
    1/2 tsp. vanilla extract
    1/3 c. confectioner’s sugar

    Cut graham crackers in half, making 18 rectangles. Place 9 in an ungreased 8-in. x 4-in. x 2-in. loaf pan; set aside.

    In a small bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Fold in whipped topping. Spread over graham crackers; top with remaining graham crackers.

    Topping:
    In a small saucepan or microwave safe bowl, melt chocolate and margarine. Stir in the remaining 3 ingredients. Spread over graham crackers. Cover and refrigerate overnight.

    One serving equals: 229 calories…7 gm fat (4 gm saturated)…6 gm cholesterol…284 mg sodium…40 gm carbohydrate…trace fiber…2 gm protein +++WWP: 5
