    Orange Couscous w/Chicken -- w
    Serves: 6

    3/4 c. orange juice
    2 tsp. low-sodium chicken bouillon granules
    1 tsp. chicken bouillon granules
    1/2 c. water

    3/4 c. couscous
    3 c. shredded cooked skinless chicken breasts
    1 11-oz. can mandarin orange sections, drained
    1/2 c. chopped parsley

    In a large Dutch oven, combine the first 4 ingredients, bring to a boil. Remove from heat; stir in couscous. Let stand, covered, until the liquid is absorbed, about 5 minutes.

    Fluff with a fork, then stir in chicken, all but 1/2 c. or orange sections, and the parsley. Cook over low heat, stirring, until heated through, about 5 minutes. Serve, garnished with remaining orange sections.

    One serving equals: 251 calories…2 gm fat (1 gm saturated)…48 mg cholesterol…239 mg sodium…34 gm carbohydrate…0 gm fiber…23 gm protein +++WWP: 5
