    Special Summer Berry Medley - 12 -- e-w
    Serves: 12

    1 c. sparkling water - or – white grape juice
    1/2 c. sugar
    1 T. lemon juice
    1-1/2 tsp. grated lemon peel
    1/2 vanilla
    1/8 tsp. salt
    3 c. sliced fresh strawberries
    2 c. fresh blueberries
    1 c. fresh raspberries
    1 c. fresh blackberries
    1 T. fresh minced mint

    In a small heavy saucepan, bring wine or grape juice and sugar to a boil. Cook, uncovered, until reduced 1/2-cup; about 15 minutes, stirring occasionally. Cool slightly. Stir in lemon juice, peel, vanilla and salt.

    In a large bowl, combine the berries and mint. Add syrup and toss gently to coat. Cover and refrigerate until serving.
