    Honeydew & Apple Salad -- e-w
    Serves: 6

    1/2 medium honeydew melon, peeled, seeded, and cut into bite-sized pieces
    2 medium tart apples, cored, halved lengthwise, and cut into bite-sized pieces
    2 medium nectarines – or – peaches, pitted and thinly sliced

    1/4 c. vanilla low-fat yogurt
    3 T. apricot jam
    1/4 tsp. ground ginger – or – nutmeg

    1 c. red raspberries

    In a large bowl combine the first 3 ingredients. For Dressing: in a small bowl stir together the next 3 ingredients. Add dressing to fruit mixture, toss to coat. Spoon into 6 dishes or glasses. Top with raspberries. Serve immediately.

    One serving equals: 109 calories…1 gm fat…1 mg cholesterol…16 mg sodium…27 gm carbohydrate…3 gm fiber…1 gm protein +++EXC: 2 fruit +++WWP:2
