    Nutty Apple Salad -- e-w
    Serves: 8

    Romaine leaves
    9 cups torn mixed salad greens
    1 small tart green apple, cored and cut into thin wedges
    1 small red apple. Cored and cut into thin wedges

    3 T. cider vinegar
    3 T. olive oil
    1/4 tsp. black pepper
    1/8 tsp. salt

    1/4 c. mixed nuts, toasted

    Place several romaine leaves over each salad plate. Top with torn greens and apples.

    In a small screw-top jar, combine the next 4 ingredients. Cover and shake. Drizzle dressing over salad. Sprinkle with nuts.

    One serving equals: 106 calories…8 gm fat (1 gm saturated)…0 mg cholesterol…73 mg sodium…9 gm carbohydrate…3 gm fiber…2 gm protein +++EXC: 1 vegetable…1/2 fruit…1-1/2 fat +++WWP: 2
