    Apple Carrot Muffins -- e-w
    Yield: 1 dozen

    1-3/4 c. raisin bran cereal
    1-1/4 c. flour
    1/4 c. sugar
    1/2 c. granulated sugar substitute (Splenda)
    1-1/4 tsp. baking soda
    1 tsp. ground cinnamon
    1/8 tsp. salt… (Do not leave out)
    1 egg
    3/4 c. low-fat buttermilk
    1/4 c. canola oil
    3/4 c. chopped peeled tart apple
    3/4 c. grated carrots
    1/4 c. walnuts

    IN a bowl, combine the first 7 ingredients. In a small bowl, beat egg, buttermilk and oil. Stir into dry ingredients just until moistened. Fold in apple, carrots and walnuts. Fill paper-lined muffin cups, sprayed with nonstick cooking spray or muffin cups sprayed with nonstick cooking spray three-fourths full. Bake at 400-F for 20-23 minutes or until a toothpick inserted near the center comes out clean. Cool five minutes before removing from pan to a wire rack. Serve warm
