Applesauce Oat Muffins - e-w

1/2 c. flour
1/4 c. quick-cooking oats
3 T. brown sugar
1 tsp. baking powder
1/4 tsp. salt
1 egg
1/4 c. fat-free milk
2 T. unsweetened applesauce
1 T. canola oil
In a bowl combine the first six ingredients. In another bowl, combine remaining ingredients just until moistened. Fill four greased muffin cups two-thirds full. Bake at 400-F for 12-15 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.
