    Apricot Walnut Bread -- e
    1 loaf….16 slices

    4 egg whites
    2.3 c, water
    1/2 c. orange juice
    1/4 c. vegetable oil
    1 tsp. vanilla extract
    3/4 c. uncooked oat bran hot cereal
    1/2 c. chopped dried apricots
    1-1/4 c. flour
    1/2 c. brown sugar
    1 tsp. baking soda
    1/2 tsp. baking soda
    1/4 c. walnuts

    In a bowl, combine the first 5 ingredients. Stir in oat bran and apricots. Combine the next 4 stir into apricot mixture just until moistened. Fold in nuts. Pour into a greased 8-in x 4-in. x 2-in. loaf pan. Bake at 350-F for 50-55 minutes or until bread tests done. Cool in pan 10 minutes; remove to a wire rack.

    One slice equals: 141 calories…42 mg sodium…0 cholesterol…20 gm carbohydrate…4 gm protein…5 gm fat ++++ Diabetic Exchanges: 1 starch…1 fat…1/2 fruit
