    Marinated Vegetable Appetizers - 12

    "Diabetic Low-fat & No Fat Meals in Minutes" - M.J. Smith, R.D.
    Marinated Vegetable Appetizers
    Plan ahead....needs to marinate for at least 4 hours

    Exchanges
    Serves: 12

    8 oz. fresh mushrooms, cleaned
    1 small head broccoli, broken into florets and washed
    8 oz. baby carrots, washed
    2 T. lemon juice

    MARINADE:
    1 c. fat-free Italian dressing
    1 T. grated lemon peel
    2 T. sliced pimiento
    2 T. chopped fresh parsley

    Combine vegetables in a microwave-safe shallow dish. Sprinkle with lemon juice. Cover and cook for 3 minutes.

    Meanwhile, marinade ingredients in a shaker container; pour over steamed vegetables. Cover and chill for at least 4 hours, stirring occasionally. Serve vegetables on a platter with toothpicks.
