    PARSNIP CROQUETTES

    Yield: Makes 20 croquettes

    - 2 cups mashed potatoes
    - 1-1/2 cups cooked parsnips, mashed
    - 1/4 teaspoon ground cinnamon
    - 1/4 teaspoon nutmeg

    For the coating:
    - 1 egg, beaten
    - Bread crumbs, as required

    Preheat the oven to 375 degrees F.

    In a large bowl, mix together the potato mixture, parsnips and ground spices. Using your hands, shape the mixture into small croquettes about 1-1/2 inches long. Place the croquettes in the freezer for 5 minutes to chill.

    Roll each croquette in the beaten egg, then in the bread crumbs, and place in an overproof dish. Bake, uncovered, for 30 minutes.

    1 croquette equals: Calories: 45, Protein: 1 g, Fat: 0 g, Carbohydrate: 9 g, Fiber: 1 g, Cholesterol: 11 mg, Sodium: 18 mg ++++ Exchanges: 1/2 Starch ++++ WWP: 1
