Reuben Bites (appetizers) -- e-w
Serves: 12
24 party rye bread slices
1/2 c. prepared fat-free Thousand Island dressing
6 oz. turkey pastrami, very thinly sliced
1 c. (4-oz.) shredded reduced-fat Swiss cheese
1/4 c. chopped green onions
Preheat oven to 400º. Arrange bread slices on nonstick baking sheet. Bake 5 minutes or until lightly toasted.
Spread 1 tsp. dressing onto each bread slice; top with pastrami, folding slices to fit bread slices. Sprinkle evenly with cheese. Bake 5 minutes or until hot. Top with green onions.
2 Rueben Bites equal: 142 calories…3 gm fat (1 gm saturated)…9 gm protein…10 gm carbohydrate…trace fiber…15 mg cholesterol…516 mg sodium +++EXC 1-1/2 starch…1 lean meat. +++WWP: 3
**Adding sauerkraut would send the sodium way too high. But if you aren’t watching sodium…go for it.
