Makeover Deluxe Brownies
Yield: 2-1/2 dozen
1/3 c. stick margarine, softened
1-3/4 c. sugar
2 eggs
3/4 c. egg substitute
3/4 c. baking fat replacement*
2 tsp. vanilla
1-1/4 c. flour
1/2 c. baking cocoa
1/8 tsp. salt
3/4 c. chopped pecans
Frosting:
1/2 c. sugar
2 T. 2% milk
2 T. stick margarine
1/4 c. semisweet chocolate chips
1/4 c. miniature marshmallows
In a mixing bowl, cream margarine and sugar. Add the next 4 ingredients; mix well.
Combine dry ingredients; add to creamed mixture. Stir in pecans. Spread in a 13-in. x 9-in. x 2-in. baking pan coated with nonstick cooking spray. Bake at 325º for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool in pan.
For Frosting: In a saucepan over low heat, cook and stir sugar, milk and margarine until sugar is dissolved. Remove from heat; stir in chips and marshmallows until melted. Spread over brownies.
