1 c. chopped dates
1/3 c. sugar
1/3 c vegetable oil
1/2 c. orange juice
1 egg, beaten
1 c. flour
1-1/2 tsp. baking powder
1 T. grated orange peel
1/2 c. chopped pecans
In a saucepan. Combine the first 4 ingredients. Cook for 5 minutes to soften dates. Cool. Add egg; mix well. Spread into an 8-in. square baking pan coated with nonstick cooking spray. Bake at 350º for 25-30 minutes. Cool before cutting.
