    Almost Sloppy Joes -- e-w
    Serves: 10

    1 T. olive oil
    1 peeled and chopped yellow onion
    1 T. peeled and minced shallot
    2 cloves peeled and minced garlic
    2 chopped green bell peppers
    1 tsp. Italian seasoning (oregano, marjoram, basil)
    1/2 tsp. salt substitute
    1/2 tsp. ground black pepper

    1 lb. lean ground beef
    1/2 lb. sliced white mushrooms
    1 14-1/2-oz. low-salt diced tomatoes
    1 15-oz. Mexican corn drained
    1 T. minced fresh parsley

    Place oil in large nonstick skillet over medium heat. Cook the first 7 items until tender. Add beef and cook until no longer pink. Spoon off excess fat. Add mushrooms. Cook, stirring 2 minutes. Add tomatoes and corn; cover and reduce heat and simmer 2-4 minutes. Add parsley serve with green salad on the side if desired.

    One 1-cup serving equals: 217 calories…11 gm fat (4 gm saturated)…18 gm carbohydrate…39 mg cholesterol…3 gm fiber…14 gm protein…215 mg sodium +++EXC: 2 vegetable…1/2 starch…1 meat…1/2 fat +++WWP: 5
