Steak au Poivre
Serves: 4
- 2 teaspoons crushed black peppercorns
- 4 beef eye of round steaks (4 ounces each), fat trimmed
- Salt, to taste
- Vegetable cooking spray
- 1/3 cup brandy
- 1/4 cup fat-free sour cream
Press peppercorns into steak, using about 1/4 teaspoon per side; sprinkle lightly with salt.
Spray medium skillet with cooking spray; heat over medium to medium-high heat until hot. Add steaks to skillet and cook over medium heat to desired degree of doneness, 3 to 4 minutes on each side for medium. Remove steaks to serving plates.
Add brandy to skillet; heat to boiling. Boil, scraping bottom of skillet to loosen cooked particles, until reduced to about 2 tablespoons, 2 to 3 minutes. Stir in sour cream and cook over low heat 1 to 2 minutes. Spoon sauce over steaks.
