    Buttermilk Biscuits

    “Low-Fat Country Cooking”
    Yield: 20 biscuits

    2 c. flour
    1/2 tsp. baking soda
    2 tsp. baking powder
    1/4 tsp. salt
    1/4 c. cold shortening
    3/4 c. buttermilk

    Sift together dry ingredients. Cut in shortening until mixture resembles coarse crumbs. Add buttermilk, stir just until the dough clings together.

    On a floured surface, knead dough gently, about 10-12 strokes. Roll to 1/2-in. thickness, cut with a 2-in. round biscuit cutter.

    Place on a baking sheet coated with nonstick cooking spray. Bake at 450º for 12-15 minutes or until lightly browned

    One biscuit equals: 71 calories…3 gm fat (1 gm saturated)…trace cholesterol…107 mg sodium…10 gm carbohydrate…2 gm protein
