    Bannocks are traditional Scottish flatbreads, similar to scones. These easy bannocks are wonderful served with hearty bean soups.

    Makes 8 Scones.

    1 cup oat flour
    1/2 cup rolled oats
    1/2 cup whole wheat pastry flour
    1 tsp. salt
    1 tsp. baking powder
    1 cup firmly packed grated Cheddar cheese, or cheddar-style soy cheese

    (Note: We used Cheddar cheese for the nutritional counts below.) 1/4 cup low-fat milk or soymilk, or more or less as needed Poppy seeds for topping

    Preheat oven to 350ºF. Lightly oil or spray-coat a baking sheet with vegetable
    spray.

    Combine the first 5 ingredients in a mixing bowl. Blend the margarine into the mixture with the tines of a fork or a pastry knife, until the mixture resembles a coarse meal.

    Stir in the cheddar cheese, then add milk as needed to form a soft dough. Turn the dough onto a floured board and knead briefly with floured hands. Form into a ball, then flatten. Roll into a round about 1/2-in. thick.

    Place on prepared baking sheet and sprinkle with poppy seeds. Score about halfway through with a knife, to make 8 wedges. Bake for 10 to 12 minutes, until the top is nicely golden.
