    Weight Watcher’s New Complete Cookbook
    Currant Scones -- w
    Serves: 12

    1 c. + 2 T. flour
    1/4 c. + 2 T. currants
    1 tsp. sugar
    1 tsp. baking powder
    1/4 tsp. baking soda

    1/2 c. low-fat buttermilk
    1 egg
    1 tsp. unsalted butter, melted

    Preheat oven to 425º; spray a baking sheet with cooking spray. In a large bowl, combine the first 5 ingredients. In a small bowl combine remaining ingredients. Pour over the flour mixture; stir just until the flour disappears (Do Not Overmix.)

    Lightly sprinkle a work surface with flour; turn out the dough. Pat into a 1/4-in. circle, cut into 12 rounds with a 2-in. cutter, or into 12 triangles with a sharp knife. Transfer to the baking sheet, placing the scones 1-in. apart. Reduce oven temperature to 400º and bake until golden brown. 12-15 minutes. Serve warm.
