Pumpkin Apple Bread -- w
Yield: 1 loaf 10 slices
2 c. flour
1/4 c. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/8 tsp. salt
1/2 tsp. cinnamon
1 egg
1 c. low-fat buttermilk
1 apple, peeled, cored and grated
1/2 c. canned pumpkin puree
1 tsp. confectioners’ sugar
Preheat oven to 350º; spray a 9 X 5-in. loaf pan with nonstick cooking spray. In a large bowl, combine the first 6 ingredients. In a small bowl beat the egg, add buttermilk apple and pumpkin. Pour over the flour mixture; stir just until blended (Do Not Overmix.)
Spoon into pan. Bake until a toothpick inserted near the center comes our clean, 1-1-1/4 hours. Cool in the pan on a rack 10 minutes; remove from pan to wire rack to cool completely. Dust with confectioners’ sugar and serve.
