Sesame Zucchini Bread

To lower carbohydrates and calories....use Granular SPLENDA in place of the white sugar.

Yield: 1 loaf (16 slices)
3/4 c. buttermilk
1/2 c. sugar
1/2 c. packed brown sugar
1 egg
1 egg white
2 T. vegetable oil
2 to 3 tsp. maple flavoring
1-1/2 c. all-purpose flour
1/2 c. whole wheat flour
1/4 c. wheat germ, toasted
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1/2 c. raisins
1/4 c. chopped walnuts
4 tsp. sesame seeds, ‘divided’
1-1/2 c. shredded zucchini
In a mixing bowl, combine the first 7 ingredients; beat until smooth. In another bowl, combine the next 6 ingredients. Add raisins walnuts and 3 tsp. sesame seeds. Stir into sugar mixture just until moistened. Stir in zucchini.
Pour into a greased 9-in. x 5-in. x 3-in. loaf pan. Sprinkle with remaining sesame seeds. Bake at 350º for 55-60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing to a wire rack.
