    Apple Breakfast Popover

    Serves: 4

    4 egg whites
    1/2 c. fat-free milk
    1/2 c. flour
    1 T. stick margarine, melted
    1/8 tsp. salt
    1-1/2 c. chopped peeled apples
    1/2 c. apple jelly
    2 T. water
    1/8 tsp. cinnamon

    In a mixing bowl, beat the first 5 ingredients until smooth. Pour into an 8-in. square baking dish coated with nonstick cooking spray. Bake at 400º for 20-25 minutes or until golden and puffed.

    Meanwhile, in a small saucepan, combine the remaining ingredients. Heat over low heat until jelly is melted and mixture is heated through. Cup popover into quarters; serve with apple topping.

    One serving (1/4 of popover w/ 5 T. apple topping) equals: 254 calories…3 gm fat (trace saturated)…0.5 mg cholesterol…194 mg sodium…48 gm carbohydrate…1 gm fiber…6 gm protein ++++ Exchanges: 2-1/2 starch…1/2 fruit…1/2 fat
