Yields 8 servings.
1/2 cup fat-free cream cheese
1 teaspoon finely chopped crystallized ginger
1/4 cup firmly packed brown sugar
1 tablespoon cornstarch
1/2 teaspoon cinnamon
1 cup Michigan apple cider or apple juice
3 cups cubed red Michigan apples
1/2 cup chopped dried mango
1/3 cup raisins
1/2 cup chopped nuts, toasted (optional)
8 diagonally cut slices (about 1 inch thick) French bread
Combine cream cheese and ginger; refrigerate.
In a 2-quart saucepan, combine sugar, cornstarch and cinnamon. Add apple cider, stirring until smooth. Add apples, mango and raisins. Cook over medium heat until mixture starts to boil, stirring constantly. Continue cooking and stirring 2 minutes longer. Remove from heat. Cool slightly before serving.
Toast bread until light golden brown in toaster or under oven broiler. Spread each slice with 1 tablespoon prepared cream cheese. Cut each slice into 2 pieces and place 2 pieces on an individual serving plate. Stir nuts into warm apple mixture and portion about 1/2 cup over each slice.
Serve immediately as an appetizer or dessert.
