    Apple Raisin Pancakes

    Apple Raisin Pancakes

    Makes 16 (4-inch) pancakes

    2 cups all-purpose flour
    2 tablespoons sugar
    1 tablespoon baking powder
    2 teaspoons ground cinnamon
    1-3/4 cups fat-free (skim) milk
    2/3 cup EGG BEATERS® Healthy Real Egg Product
    5 tablespoons FLEISCHMANN'S® Original Margarine, melted, divided
    3/4 cup chopped apple
    3/4 cup seedless raisins

    In large bowl, combine flour, sugar, baking powder and cinnamon. In medium bowl, combine milk, Egg Beaters® and 4 tablespoons margarine; stir into dry ingredients just until blended. Stir in apple and raisins.

    Brush large nonstick griddle or skillet with some of remaining margarine; heat over medium-high heat. Using 1/4 cup batter for each pancake, pour batter onto griddle. Cook until bubbly; turn and cook until lightly browned. Repeat with remaining batter using remaining margarine as needed to make 16 pancakes.
