Blueberry-Bran Pancakes -- w
Serves: 10
1 c. Fiber One cereal
2 egg whites
1-1/4 c. buttermilk
2 T. vegetable oil
1 c. flour
1 T. sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 c. fresh or frozen (thawed and well drained) blueberries
Spray unheated skillet or griddle with cooking spray, then heat over medium-high heat until hot (Or electric griddle to 375º.) Crush cereal.* Stir together egg whites, buttermilk, oil and cereal in medium bowl; let stand 7 minutes. Combine the next 5 ingredients; beat into egg mixture with a wire whisk or fork until blended. Gently stir in blueberries.
Pour 1/4-cup batter onto hot griddle for each pancake. (If batter is too thick, stir in additional milk 1 T. at a time until desired consistency.) Cook pancakes until puffed and full of bubbles, but before bubbles break. Turn and cook other sides until golden brown. Makes 10 5-in. pancakes.

* Place cereal in plastic bag or between sheets of waxed paper and crush with rolling pin – or – crush in blender or food processor.
