Orange Whole Wheat Pancakes -- e-w
Yield: 16 pancakes
3 egg whites
1 c. orange juice
1/3 c. unsweetened applesauce
1/4 tsp. orange extract
1-1/4 c. whole wheat flour
2 T. sugar
2 tsp. baking powder
1/8 tsp salt
1/2 c. orange marmalade
In a blender, place the first 4 ingredients. Cover and process until smooth. In a bowl, combine the flour, sugar, baking powder and salt; make a well. Add orange juice mixture; stir just until moistened.
Pour batter by 2 Tablespoonfuls onto a hot griddle coated with nonstick cooking spray. Turn when bubbles form on top of pancake; cook until second side is golden brown. Serve with marmalade.
