    Pineapple Cheese Toast

    Pineapple Cheese Toast
    Serves: 4

    1/3 c. 1% lowfat cottage cheese
    1/4 c. part-skimmed ricotta cheese
    1/2 c. crushed pineapple
    1 T. apricot all-fruit spread
    Pinch ground ginger

    4 slices toasted reduced-calories whole grain bread

    In a small bowl, combine the first 5 ingredients. Cut each slice of toast into 2 triangles, spread with equal amounts of cheese mixture. Broil in toaster oven until bubbly.

    2 triangles equal: 104 calories…6 gm protein…2 gm fat…19 gm carbohydrate…190 mg sodium…6 mg cholesterol
