Mahimahi (fish) w/Fresh Pineapple Salsa (Broil) -- e-w
Serves: 4
1-1/2 c. diced fresh pineapple
1/4 c. finely chopped red bell pepper
1/4 c. finely chopped green bell pepper
2 T. chopped fresh cilantro
1/2 tsp. dried red pepper flakes
1/2 tsp. grated lime peel
2 T. fresh lime juice, ‘divided’
4 uncooked mahimahi fillets (4-oz each)
1 T. olive oil
1/2 tsp. white pepper
To Prepare Salsa:
Combine the first 6 ingredients and 1 T. lime juice in a medium bowl.
Preheat broiler. Spray rack of broiler pan with nonstick cooking spray. Rinse mahimahi; pat dry with paper towels. Place fish on rack. Combine remaining 1 T. lime juice and olive oil in small bowl; brush onto fish.
Broil 4-inches from heat 2 minutes. Turn and brush other side, sprinkle with white pepper. Continue to broil 2 minutes more or until mahimahi flakes easily when tested with a fork. Serve with pineapple salsa.
