Chocolate Devil�s Food Sheet Cake -- w
Serves: 16
1-2/3 c flour
1-1/2 c. sugar
2/3 c. cocoa powder
1-1/2 tsp. baking soda
2 oz. semi-sweet chocolate chips
1 T. instant coffee granules
1-1/2 c. 1% milk
1/3 c. olive oil
1 tsp. vanilla
1 egg
2 egg whites
Preheat oven to 350�. Spray a 13 x 9 x 2 inch baking dish with nonfat cooking spray. Lightly dust with flour. Set aside.
In a large bowl combine all ingredients and beat on low, occasionally scraping bits off the sides, for 3 minutes. Pour mixture into prepared baking dish and bake for 35-40 minutes or until a toothpick inserted near the center comes out clean. Remove from oven and let cool for 10 minutes before frosting with Chocolate Glaze.
Chocolate Glaze
6 T. butter
1/3 c. 1% milk
1/3 c. cocoa powder
3 c. powdered sugar
1 tsp. vanilla
In a medium saucepan, combine butter, milk and cocoa. Bring to a boil, stirring frequently. When mixture reaches boiling, remove from heat and sift in powdered sugar. Whisk to mix well. Stir in vanilla. Spread over cake and let cool before serving.
