    Nuts: Cran-Apple Walnut Cake
    WW Points
    Serves: 15

    1 egg
    2 egg whites
    1-3/4 c. packed brown sugar
    1/4 c. canola oil
    1/4 c. unsweetened applesauce
    1 tsp. vanilla extract

    1 c. all-purpose flour
    1 c. whole wheat flour
    1 tsp. baking soda
    1/8 tsp. salt
    1 tsp. ground cinnamon
    1/2 tsp. ground nutmeg

    2 c. chopped peeled apples
    2 c. fresh cranberries, halved
    1/2 c. chopped walnuts
    2 tsp. confectioners’ sugar

    In a mixing bowl, beat the first 6 ingredients. Combine the dry ingredients; stir into the applesauce mixture just until blended. Fold in the remaining ingredients. Pour into a 13-in. x 9-in. x 2-in. baking dish coated with nonstick cooking spray. Bake at 350º for 35-40 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Dust with confectioners’ sugar.
