    "1,001 Delicious Desserts For People with Diabetes"
    BEANY BITES - e
    Yield: 4 dozen cookies

    Note: No one will guess that the secret to these moist cookies is pureed beans - a nutritional bonus, too!

    - 1 can (15 ounces) garbanzo beans, rinsed, drained
    - 1/4 cup orange juice
    - 1/2 cup margarine, softened
    - 2/3 cup packed light brown sugar
    - 1 egg
    - 1/2 teaspoon vanilla
    - 1-1/2 cups all-purpose flour
    - 2 teaspoons baking powder
    - 1/4 teaspoon salt
    - 1/2 teaspoon ground cinnamon
    - 1/4 teaspoon ground nutmeg
    - 1/3 cup fat-free milk
    - Orange, or Lemon, Glaze (recipes to follow)
    - Ground nutmeg, as garnish

    Process beans and orange juice in food processor or blender until smooth. Beat margarine, brown sugar, egg, and vanilla in large bowl until blended; mix in bean mixture. Mix in
    combined flour, baking powder, salt, and spices alternately with milk, beginning and ending with dry ingredients.

    Drop dough by scant tablespoons onto greased cookie sheets. Bake at 375 degrees until lightly browned, 12 to 15 minutes. Cool on wire racks; drizzle with glaze and sprinkle very lightly with nutmeg.


    ORANGE GLAZE
    Yield: Makes about 1/4 cup

    - 1/2 cup powdered sugar
    - 1 teaspoon grated orange rind
    - 2-4 teaspoons orange juice

    Mix powdered sugar and orange rind with enough orange juice to make glaze consistency.

    LEMON GLAZE
    Yield: Makes about 1/4 cup

    - 1/2 cup powdered sugar
    - 1-2 teaspoons finely grated lemon rind
    - 3-4 teaspoons lemon juice

    Mix powdered sugar, lemon rind, and enough lemon juice to make glaze consistency.
