    Chocolate Orange Meringues

    Chocolate Orange Meringues

    Yield 5 dozen cookies

    3 egg whites
    1/2 tsp. vanilla extract
    1/8 tsp. orange extract
    3/4 c. sugar
    1/4 c. Hershey’s Cocoa
    1/2 tsp freshly grated orange peel

    Heat oven to 300º Cover cookie sheet with parchment paper or foil. In large mixing bowl, beat the first 3 ingredients on HIGH speed until soft peaks form. Gradually add sugar, beating well after each addition until stiff peeks hold their shape, sugar is dissolved and mixture is glossy.

    Sprinkle half of cocoa and all of orange peel over egg white mixture; gently fold in just until combined. Repeat with remaining cocoa. Spoon mixture into a pastry bag fitted with a large star tip, pipe 1-1/2-inch diameter stars onto prepared cookie sheet.

    Bake 35 to 40 minutes or until dry. Cool slightly; peel paper from cookies. Cool completely on wire rack. Store covered, at room temperature.
