    Double Chocolate Sugar Cookies

    Double Chocolate Sugar Cookies

    Makes: 2-1/2 dozen cookies

    2 egg whites, slightly beaten
    1/4 c. light margarine, melted
    1 T. water
    1 tsp. vanilla
    2-1/2 HERSHEY’S Basic Cocoa Baking Mix (see Make Your Own Chapter)
    1/4 c. sugar
    Chocolate Glaze (recipe follows)

    Heat oven to 350º. Lightly spray cookie sheets with a non-stick cooking spray.

    In a medium bowl stir together the first 4 ingredients. Stir in Basic Cocoa Mix until well blended. Shape dough into 1-inch balls. Roll in sugar to coat. Place 2-inches apart on prepared cookie sheets. Press balls flat with bottom of glass.

    Bake 6 to 8 minutes or until set. Cool 5 minutes; remove from cookie sheet to wire racks. Cool completely. Drizzle Chocolate Glaze over tops of cookies. Let stand until set. Store, covered at room temperature.

    Chocolate Glaze: In a small microwave-safe bowl place 1/4 c. Hershey’s Semi-Sweet Chocolate Chips and 1/2 tsp. shortening (DO NOT use butter, margarine or oil). Microwave on HIGH 30 seconds; stir. If necessary, microwave at HIGH an additional 30 seconds or until chips are melted and mixture is smooth when stirred. Use immediately.

    One cookie with glaze equals: 70 calories…1 gm protein…13 gm carbohydrate…2 gm fat…0 mg cholesterol…25 mg sodium
