    Pumpkin Spice Cookies - ww

    Yield: 32 cookies

    1 18-1/4-oz. pkg. reduced-fat yellow cake mix
    1/2 c. quick-cooking oats
    2 to 2-1/2 tsp. pumpkin pie spice

    1 egg
    1 15-oz. can solid-pack pumpkin
    2 T. canola oil

    3 c. confectioners’ sugar
    1 tsp. grated orange peel
    3 to 4 T. orange juice

    IN a bowl, combine the first 3 dry ingredients. In another bowl beat the next 3 ingredients; stir into dry ingredients just until moistened. Drop by 2 Tablespoonfuls onto baking sheets coated with nonstick cooking spray; flatten with back of spoon.

    Bake at 350º for 18-20 minutes or until edges are golden brown. Remove to wire racks to cool.

    In a bowl, combine confectioners’ sugar, orange peel and orange juice to achieve desired spreading consistency. Frost cooled cookies.
