    Slice-of Orange Cookies

    Slice-of Orange Cookies
    Plan ahead ...dough needs to chill from 4 to 48 hours.
    Makes about 60.

    2 1/3 cups all-purpose flour
    1 cup sugar
    3/4 cup margarine or butter, softened
    1 egg
    2 teaspoons finely shredded orange peel
    2 tablespoons orange juice
    1 teaspoon baking powder
    1/4 teaspoon salt
    1/2 cup finely chopped almonds
    Decorator's Icing (Recipe below)
    3 to 4 drops yellow food coloring (optional)
    I drop red food coloring (optional)

    In a large mixing bowl combine flour, sugar, margarine or butter, egg, orange peel, orange juice, baking powder, and salt. Beat with an electric mixer about 30 seconds or till combined. Beat on medium speed for 2 minutes, scraping sides of bowl frequently.

    Shape into two 7 -inch rolls. Roll in finely chopped almonds. Flatten one side of each roll. Wrap each in waxed paper or plastic wrap. Chill for 4 to 48 hours.

    Cut dough into I/4 -inch-thick slices. Place1 inch apart onto ungreased cookie sheets. Bake in a 375º oven for 10 to 12 minutes or till edges are lightly browned. Remove cookies and cool on wire racks. If desired, tint decorator's Icing with yellow and red food coloring. Pipe icing in loops on each cookie to represent orange sections.

    Decorator's Icing:
    In a small mixing bowl combine 1 cup sifted powdered sugar, 1/2 teaspoon vanilla, and enough light cream or milk about 1 tablespoon) to make icing of piping consistency.
