    Soft Apple Cider Cookies -- e-w
    Yield: 48 cookies

    1 c. firmly packed light brown sugar
    1/2 c. Fleischmann’s Original Margarine, softened
    1/2 c. apple cider
    1/2 c. EGG BEATERS Healthy Real Egg Product

    2-1/4 c. flour
    1-1/2 tsp. cinnamon
    1 tsp. baking soda
    1/8 tsp. salt

    2 medium apples, peeled and diced (about 1-1/2 cups
    3/4 almonds, chopped
    Cider Glaze (recipes follows)

    In a large mixing bowl beat sugar and margarine at medium speed until creamy. Add cider and Egg Beaters; beat until smooth. Combine the next 3 ingredients; with mixer on low speed gradually add to creamed mixture. Stir in apples and almonds.

    Drop by Tablespoonfuls, 2-inches apart, onto greased baking sheets. Bake at 375º for 10-12 minutes or until golden. Remove from sheets; cool on racks. Drizzle with glaze and allow to dry.

    Cider Glaze:
    In a small bowl combine 1 c. powdered sugar and 2 T. apple cider until smooth.

    One cookie equals: 24 calories…3 gm fat (trace saturated)…13 gm carbohydrate…0 mg cholesterol…trace fiber…2 gm protein…55 mg sodium +++EXC: 1 starch…1/2 fat +++WWP: 1
