    Whoopie Pies (Too much salt...will fix)

    Whoopie Pies are old-fashioned favorites, joining soft chocolate cookies with creamy filling.

    WW Points
    Makes about 2 dozen.

    2/3 cup shortening
    2 eggs, at room temperature
    2 teaspoons vanilla
    4 cups flour
    2 cups sugar
    1 cup cocoa
    2 teaspoons baking soda
    1/4 teaspoons salt
    2 cups milk, at room temperature

    Filling:
    2 egg whites, beaten stiff
    1/2 cup shortening
    2 cups powdered sugar
    1 teaspoon vanilla
    1/4 teaspoon salt

    Preheat oven to 350ºF. Cream shortening. Add eggs and vanilla. Sift together dry ingredients; add to shortening mixture alternating with milk, beginning and ending with dry ingredients.

    Drop by tablespoons onto cookie sheet. Bake 15 to 20 minutes; cool.

    Mix all filling ingredients together. Spread a teaspoon on a cookie; top with another cookie.

    One Whoppie Pie equals: 297 calories, 11.8 grams fat, 21 milligrams cholesterol, 45.6 grams carbohydrates, 1.8 grams fiber, 4.3 grams protein, 126 milligrams sodium. ++++ WWP: 7
