Scrambled Eggs & Ham in Sweet Potato Boat - 2
Serves: 2
4 large egg whites
2 tsp. skim milk
2 oz. Canadian bacon or ham, visible fat removed, diced
Nonstick cooking spray
2 medium sweet potatoes, baked
Optional: Garnishes – 1 T. grated low-fat cheddar cheese & black pepper to taste
In a small bowl, whisk together egg whites and milk. Add ham.
Spray a small nonstick skillet with nonstick cooking spray and place over medium heat. Add egg mixture and stir. Cook until semi-firm.
Cut each potato in half, lengthwise. Top potato halves with scrambled eggs. Garnish with cheese and pepper if desired. Serve hot.
