    Soup: “Forgotten” Minestrone -- e

    Taste of Home – M. Ransom; South Haven, MI
    “Forgotten” Minestrone (crockpot) -- e
    Serves: 8

    1 lb. lean beef stew meat
    6 c. water
    1 28-oz. can tomatoes with liquid, cut up
    1 beef bouillon cube
    1 medium onion, chopped
    2 T. minced dried parsley
    1-1/2 tsp. ground thyme
    1/2 tsp. pepper

    1 medium zucchini, thinly sliced
    2 c. finely chopped cabbage
    1 16-oz. can garbanzo beans, rinsed and drained
    1 c. uncooked small elbow or shell macaroni

    Optional: 1/4 c. grated Parmesan cheese

    In a slow cooker, combine the first 8 ingredients. Cover and cook on LOW for 7-9 hours or until meat is tender. Add the next 4 ingredients; cook on HIGH, covered 30-45 minutes more or until vegetables are tender. Optional, sprinkle with Parmesan cheese if desired.

    One serving w/o cheese equals: 2436 calories…453 mg sodium…4\33 mg cholesterol…20 gm carbohydrate…19 gm protein…6 gm fat +++EXC: 2 vegetable…1-1/2 starch…1 meat
