Pork Roast w/Apricot Glaze (crockpot) -- w
Serves: 8
1 3-3-/2 lb. boneless pork shoulder roast
1 18-oz. jar apricot preserves
1 large onion, chopped
1/4 c. chicken broth
2 t. Dijon-style mustard
Trin fat from meat. If necessary cut meat to fit into at 3-1/2 to 6-qt. slow cooker. Place meat in cooker. For Glaze: In a bowl, combine remaining ingredients; pour over meat.
Cover and cook on LOW for 10-12 hours – or – on HIGH for 5-6 hours. Transfer meat to serving platter. Skim fat from glaze. Spoon some of the glaze over the meat, discard remaining glaze.
